Driven by curiosity, Gaetan then embarked on an international career with a luxury hotel group, taking him to the United States, Dubai, Thailand, Malaysia, and Indonesia. It was in Southeast Asia that he found a profound connection to the region’s vibrant markets, expressive flavors, and cultural diversity.

Over more than a decade in Asia, he has cultivated a distinctive style that harmoniously blends classical French foundations with the bold, aromatic character of Southeast Asian cuisine. At Rumari, Gaetan continues to evolve his culinary vision, drawing inspiration from Bali’s local producers to create dishes that reflect both innovation and heartfelt passion.
