Albert Adrià was born in Hospitalet on 20 October 1969. In 1985, he left his studies to join the team at elBulli, where he developed a passion for creativity and innovation in the kitchen.
In 1997, following the publication of Los Postres de El Bulli, he launched the elBulli workshop, which he directed until his departure. In 2006, he opened Inopia Classic Bar in Barcelona, introducing a fresh approach to casual dining and helping to pioneer the modern “gastrobar” concept. This was followed by 41o in 2011, blending cocktails and snacks, and Tickets, a playful and inventive take on tapas.
His curiosity for other cuisines led to the creation of Pakta in 2013, celebrating Japanese and Peruvian influences, and Bodega 1900, reimagining Barcelona’s vermouth tradition. That same year came Niño Viejo, a casual Mexican taqueria, and Hoja Santa, a more gastronomic Mexican restaurant.
In 2015, Adrià partnered with Ferran Adrià and Cirque du Soleil for Heart Ibiza, and in 2017 opened Enigma, his most ambitious project in Barcelona. He later launched Cakes & Bubbles in London and collaborates internationally, including with José Andrés on Mercado Little Spain in New York.
