ALEJANDRO CHAMORRO
Ecuadorian-born chef Alejandro Chamorro, after training in prestigious kitchens like Noma and Astrid y Gastón, returned to Quito to launch his own restaurant, Nuema. His deep belief in the diverse products of Ecuador shapes his menu, reflecting a product-based culinary philosophy. Constantly seeking balance in flavors and aesthetic presentation, Alejandro is a natural storyteller who is proud of Ecuador’s culinary offerings and supports local ingredients.

PIA SALAZAR
Pía Salazar, an exceptional talent in both sweet and savory flavors, advocates for the recognition of women chefs in Latin America and globally. Hailing from Cuenca in the Ecuadorian Highlands, her innovative approach to desserts is a cornerstone of Nuema’s menu. Her curiosity about flavor development leads her to create stunning desserts that combine fruits, vegetables, spices, and local produce in surprising ways. Pía’s vision is to encourage guests to see Ecuador’s native ingredients from a new perspective, turning her sweet creations into a unique awakening for the palate.
