Antonia Klugmann, chef and owner of L’Argine in Vencò near the Slovenian border, discovered her passion for cooking while studying law. She trained in North-East Italian restaurants before becoming an entrepreneur and opening her first establishment. In 2014, she launched L’Argine a Vencò in the Collio Goriziano region, surrounded by vineyards and hills, offering four cozy guest rooms.
Her cuisine celebrates seasonal flavors, blending innovative techniques with locally sourced ingredients that highlight the biodiversity of Friuli-Venezia Giulia. Vegetables, fruits, and herbs—both cultivated and wild—play a central role in her creations. Committed to sustainability, she minimizes waste while enhancing the natural qualities of her ingredients, reflecting her belief that beauty, luxury, and ethics must coexist.
Drawing on her Jewish-Italian heritage, Klugmann combines tradition with personal experience, creating dishes that are inventive yet rooted in cultural identity. Her approach emphasizes creativity, respect for the environment, and the ability to surprise and captivate guests through thoughtful, original culinary expression. L’Argine a Vencò has gained wide critical recognition and is celebrated for its unique vision of contemporary Italian cuisine.
