Chef Bee Satongun is a Thai chef who grew up immersed in her family’s culinary traditions, learning to prepare homemade pastes and assisting at her mother’s khanom jeen stall. After meeting Australian chef Jason Bailey, she moved to Australia, where she further refined her skills in Thai cuisine under his guidance. Together, they opened Paste in Bangkok in 2012, reinterpreting traditional Thai dishes with a modern approach.

Their culinary philosophy combines historical research, indigenous Thai techniques, and ingredients sourced from rural regions, resulting in dishes that are both visually striking and deeply layered in flavour. Bee’s focus on balance, texture, and umami synergy has positioned Paste as a leading reference in contemporary Thai cuisine.

In 2015, she took over the Bangkok kitchen, elevating the restaurant’s identity through an innovative menu and refined execution. Her work has earned sustained international recognition and critical acclaim for excellence and consistency. In 2020, Paste expanded to Australia, further strengthening its reputation for authentic yet progressive Thai gastronomy.
