Austin’s culinary journey began at the Institute of Culinary Arts in Stellenbosch and evolved through formative work in some of the Cape’s leading kitchens, including Grand Provence under Darren Badenhorst. These experiences shaped his precise yet boundary-pushing style, marked by fermentation, fire, foraging, and a signature interplay of raw and refined elements.

In 2022, he launched DUSK, a space known for its introspective, atmospheric dining experience. Two years later, he and Badenhorst introduced DAWN by DUSK, an intimate test kitchen and creative laboratory where guests engage directly with the craft through an open kitchen and multi-sensory formats.

Beyond his restaurants, Austin is a mentor, advocate for conscious gastronomy, and passionate collaborator with local producers. His work continues to shape South Africa’s culinary landscape, driven by a philosophy of balance, sustainability, and emotional connection through food.
