Dabiz Muñoz was born on the 15th of January 1980 in Madrid. As a child, he was restless and dreamed of becoming a professional footballer, he even played in the youth teams of Atlético de Madrid before making his debut in the 2nd division B.

By the age of 12, he regularly accompanied his parents to the Viridiana Restaurant owned by the great chef Abraham García. There he became fascinated by haute cuisine and idolised chef García, towards whom he felt great admiration and trust. Dabiz began to cook at home and dreamed of creating incredible recipes, the kind that no one had ever made before. His goal soon became clear, to open a successful restaurant where customers would have to wait a long time to visit. His sceptical father used to tell him “You’ll achieve that when pigs fly!”.
