Eduardo Ortiz was born in Oaxaca, Mexico, where he began his career in professional kitchens at a young age, progressing through every role and developing a deep respect for technique, fire, and corn-based cuisines. His journey later led him to New York, where he refined his craft in internationally recognized kitchens focused on contemporary Mexican gastronomy.

Luana Sabino was born in São Paulo, Brazil, and built her foundation working in some of the city’s most respected restaurants before moving to New York. There, she expanded her perspective on product-driven cooking, seasonality, and modern kitchen organization. It was in New York that Eduardo and Luana met, discovering a shared vision rooted in cultural exchange, precision, and respect for ingredients.

In 2020, they returned to Brazil to open Metzi, conceived as a space where Mexican techniques meet Brazilian biodiversity through local sourcing and close relationships with farmers and producers. Their cuisine is defined by balance, clarity of flavors, and a strong sense of identity. Since opening, Metzi has received significant critical acclaim and industry recognition, and the duo has been celebrated among the most influential and exciting voices of contemporary Latin American cuisine.
