Fidel Caballero is the chef and owner of Corima, a modern Northern Mexican restaurant in Chinatown, NYC. Originally from Ciudad Juárez and El Paso, TX, Fidel has spent the past 15 years traveling the world, honing his craft in acclaimed kitchens including Contra in NYC and Martín Berasategui in Spain. Before opening Corima, he ran pop-ups across France, Bangkok, 

Mexico City, and New York City at venues such as Fulgurances, Winner, Ops, and Places des Fêtes. At Corima, Fidel draws inspiration from the Chihuahuan desert to highlight Northern Mexican ingredients and techniques while incorporating influences from his travels in China, Spain, France, and beyond. Since opening in January 2024, Corima has received significant 

acclaim, including being named one of Bon Appetit’s Best New Restaurants in America 2024—the only NYC restaurant to receive this recognition—and a Semi-Finalist for the James Beard Foundation Best New Restaurant 2025. In 2025, Fidel was awarded One Knife by the Best Chef Awards, solidifying his reputation as a rising force in contemporary Mexican cuisine.
