Panamanian chef and restaurateur Fulvio Miranda is a leading figure in the emergence of Panama’s contemporary culinary identity. Born in the province of Chiriquí, he discovered his passion for cooking early on and chose to leave formal studies in mathematics and science to pursue a career in the kitchen.
He is the co-founder of Cantina del Tigre, alongside Juan Carlos Noriega and Mark Vanderwerf. Created during the pandemic, the project was driven by a shared vision rooted in authenticity, local products, and cultural identity. In its early days, the team travelled across the country delivering ceviche door to door, forging strong human connections that shaped the restaurant’s soul and community-focused ethos.
Today, Cantina del Tigre stands as one of the region’s most exciting dining destinations, earning major international accolades and recognition as a standout new culinary project. In 2025, Fulvio Miranda received a Knife at The Best Chef Awards, further cementing his growing international reputation.
Previously, he founded Esa Flaca Rica, a highly successful concept that redefined casual dining in Panama. Fulvio’s cuisine celebrates local ingredients, traditional techniques, and Panamanian heritage, reinterpreted through a contemporary and creative lens.
