Chef Gaetano Trovato, born in Scicli, Sicily, grew up surrounded by the aromas of wood-fired bread and traditional craftsmanship, an early experience that shaped his lifelong respect for ingredients and seasonality . After honing his skills in Italy, France, and Switzerland under culinary masters such as Roger Vergé and Gaston Lenôtre, he settled in Tuscany, where he opened Arnolfo in 1982 with the support of his mother and sister .

Guided by the principles of purity, precision, and emotional connection, Trovato crafts dishes that reflect both Tuscan heritage and his own architectural sense of flavour. Around 80% of his ingredients are sourced from the surrounding countryside, working closely with organic farmers and small local producers to maintain an authentic, deeply rooted culinary identity .

Renowned for elevating regional cuisine through refinement and creativity, Trovato has become a benchmark of Italian gastronomy. As a mentor, he continues to inspire a new generation of chefs, championing technique, tradition, and the belief that truly great cuisine emerges from integrity, artistry, and a profound respect for place.
