After gaining experience in culinary research and development, he returned to fine dining. While in the United States, he refined his skills through various stages and full-time positions at renowned restaurants, including
Yono’s Fine Dining Restaurant in Albany, New York, and the Michelin-starred Next Restaurant of the Alinea Group in Chicago. He also participated in pop-up series hosted by several restaurants in Chicago. After returning to Indonesia in 2016, Hans joined Fairmont
Hotel Jakarta as Chef de Cuisine, leading the team at VIEW Restaurant, a 30-seat fine dining venue serving modern European cuisine with an Asian twist. In late 2019, he decided to embark on a new journey to elevate Jakarta’s culinary scene by curating August, a contemporary restaurant that presents modern flavors with Indonesian influences.
