Reopened in September 2023 in Jardim Paulistano, Tuju occupies a three-story space designed by architect Angelo Bucci, featuring minimalist concrete structures, vertical gardens, and Brazilian design elements. The experience includes appetizers in a patio under a jabuticabeira tree, a dining area around an open kitchen, and a terrace for petit fours and cheeses.
Tuju is the first Brazilian restaurant with its own research institute, focused on São Paulo’s ingredient seasonality. Ralston’s cuisine combines refined simplicity with advanced techniques, showcasing local ingredients and producers.
