Chef Jaime Torregrosa, chef and owner of Humo Negro in Bogotá, opened his restaurant in August 2021 after more than 15 years of experience in leading kitchens around the world. His career includes formative periods in renowned and highly awarded restaurants such as Manresa and Grace in the United States, Faviken in Sweden, Ca Sento in Japan, and El Chato in Colombia.
In 2018, he completed a master’s degree in cooking at the Basque Culinary Center in San Sebastián, further refining his technical and creative foundations.
Drawing inspiration from his international journey, Jaime’s cuisine blends Latin American, Nordic, and Asian techniques. Each dish centres on exceptional Colombian ingredients — pirarucú, chontaduro, chipi chipi, carantanta, mambe and more — presented either as shared plates or through an Omakase-style tasting menu, complemented by signature cocktails.
Humo Negro has earned significant recognition since opening, including a prominent placement among the most celebrated restaurants in Latin America in 2024.
