Chef Jonathan Tam, head chef and owner of Jatak, has built a career rooted in seasonality, creativity, and cultural heritage. Born to Chinese parents, Tam grew up with a deep appreciation for food, which later shaped his culinary philosophy. In 2007, he moved to Denmark to work at the renowned Noma, where he gained invaluable experience in innovative, ingredient-driven cooking. In 2010, he joined the opening team of Relæ, a 

restaurant celebrated for its minimalist, vegetable-forward approach. Over the years, Tam honed his skills and deepened his understanding of seasonality and sustainable sourcing, eventually becoming head chef of Relæ in 2016. In January 2022, Tam opened Jatak in Copenhagen, where he merges his Chinese heritage with the best Scandinavian 

ingredients. His cuisine reflects a balance between tradition and innovation, focusing on precision, simplicity, and deep flavors. Jatak quickly gained recognition for its refined yet approachable dishes, showcasing Tam’s ability to blend Asian influences with Nordic sensibilities. With a commitment to sustainability and craftsmanship, Tam continues to shape Copenhagen’s dining scene with his unique culinary vision.
