Jose Luis Hinostroza, a Southern California native, grew up in a Mexican household in one of America’s richest agricultural regions, the birthplace of the farm-to-table movement. His culinary journey began at Alinea in Chicago, where he became kitchen manager at 21, immersing himself in the fast-paced world of fine dining.

Hinostroza’s career then took him to Europe, where he worked at Maaemo in Norway and El Celler de Can Roca in Spain before becoming Chef de Cuisine at De Kromme Watergang in the Netherlands by age 24. He later joined Noma in Copenhagen, contributing to its research and development team, including the Noma Mexico project.

Now at ARCA, Hinostroza presents a bold, product-driven menu celebrating Mexico’s vibrant flavors. His years in world-class kitchens inform his casual fine-dining approach, blending technical expertise with a deep connection to Mexican culinary traditions.
