Juan Amador, born on December 10, 1968, in Strümpfelbach, Germany, to Catalan-Andalusian parents, is a celebrated chef known for his pioneering culinary approach. He began his classical apprenticeship at Gasthof Lamm in Weinstadt from 1985 to 1988, followed by positions at Alten Wirt in Munich and Schlosshotel Bühlerhöhe in the Black Forest.
In 1990, Amador joined Albert Bouley at Hotel Waldhorn in Ravensburg, an experience that profoundly shaped his culinary vision. By 1993, he became head chef at Restaurant Petersilie in Lüdenscheid and, at just 25, earned his first major international recognition. Over the following decade, he led the kitchens of Fährhaus Munkmarsch in Sylt and Schlosshotel Weyberhöfe in Aschaffenburg, collecting numerous prestigious culinary accolades.
In 2004, he opened his first restaurant, Amador, in Frankfurt, quickly gaining acclaim for its innovative and expressive cuisine. After relocating to Mannheim in 2011 and later to Vienna in 2015, Amador continued to refine his style.
