Lennox Hastie is a chef driven by a passion for fire and its unique ability to transform ingredients. After gaining experience in Michelin-starred kitchens across the UK, France, and Spain, Lennox found himself increasingly disconnected from what initially drew him to cooking—the ingredients themselves.

This changed when he discovered Asador Etxebarri, a renowned wood-fired grill restaurant in Spain, led by chef Victor Arguinzoniz. The experience of cooking over fire reignited his love for simplicity and purity in food. Lennox spent five transformative years at Etxebarri, pushing the boundaries of wood-fire cooking and learning to highlight the natural flavors of the ingredients.

Returning to Australia in 2011, Lennox sought to share his newfound culinary philosophy and teamed up with the Fink Group. In 2015, he opened Firedoor, a restaurant where fire takes center stage, and in 2022, he expanded his culinary vision with Gildas, a Basque-inspired wine bar in Surry Hills. Through both ventures, Lennox continues to celebrate the beauty of ingredients cooked with fire.
