Rooted in craftsmanship and respect for ingredients, Mark believes that understanding a dish means understanding its origin. His cooking style blends classic French tradition with Nordic minimalism, resulting in dishes defined by purity, balance, and refined flavor.

Born in Silkeborg and raised in Southern Jutland, he trained at Restaurant Fakkelgården and went on to build a career in French-inspired kitchens, including Ruths Hotel in Skagen, Restaurant Sletten, Falsled Kro, Lebzelter Obauer in Austria, Alinea in Chicago, and L’Auberge de L’Ill in Alsace.

Mark draws inspiration from antique cookbooks and literary depictions of grand dinners, translating history into modern, elegant cuisine. A devoted hunter and family man, he is father to Julius and Samuel and husband to journalist and cookbook author Nadia Lundgaard.
