Mitja Birlo (born 1985 in Berlin) is a celebrated chef known for his contemporary, nature-driven approach to fine dining. After training at the historic Torschreiberhaus in Stadthagen, he refined his craft in several influential kitchens across Europe, including renowned establishments in Germany, London and Switzerland. His career gained momentum through roles at Traube Tonbach, Viajante in London and Heimberg in Zermatt, before he joined the 7132 Hotel in Vals in 2014, where he later became Head Chef of the acclaimed 7132 Silver restaurant.
Birlo is widely recognised for elevating local and foraged ingredients through a creative, globally inspired lens. His work has earned him significant professional praise, including being named Chef of the Year 2022 by Gault&Millau Switzerland, alongside other distinctions celebrating his craftsmanship, originality and leadership in contemporary cuisine.
After nearly a decade in Vals, Birlo embarked on new creative projects and is now Chef de Cuisine at The Counter in Zürich, where he champions an intimate, immersive style of cooking that highlights authenticity, precision and the beauty of the culinary process.
