Mitsuharu „Micha” Tsumura is the chef and owner of Maido in Lima, Peru, and a leading figure in Nikkei cuisine. Born in Lima to a family with roots in Osaka, Japan, he grew up immersed in both Peruvian and Japanese culinary traditions. He studied at Johnson & Wales University in the U.S. and trained in Japan, refining his skills in blending Japanese techniques with Peruvian ingredients.
Before founding Maido, Tsumura worked as Sous Chef and Food & Beverage Manager at the Sheraton Hotel in Lima, where he gained valuable experience in culinary operations and menu development. At 28, he turned down a general manager position to pursue his dream of opening his own restaurant.
Maido, meaning „welcome” in Japanese, is a tribute to the harmony of two cultures. Tsumura’s cuisine tells stories of tradition and innovation, making his restaurant a global reference for Nikkei gastronomy.
