Nicoló Rotella spent much of his childhood in the kitchen with his father, a restaurant owner in Turin, Italy. He fondly recalls finishing his homework while watching the chefs at work, sparking a fascination that would shape his future. He later attended the culinary program at the Italian Chefs Association, where he realised that cooking was not just a passion, but a lifelong career
After graduation, Nicoló honed his skills in a variety of Italian restaurants, gaining experience across seafood, traditional, and modern Italian cuisine. He served as Junior Sous Chef at Il Sorriso and later joined Marco Sacco’s team at Il Piccolo Lago, where he refined modern culinary techniques alongside top talents.
In 2019, Nicoló joined Da Vittorio in Bergamo under Chef Chicco Cerea, and subsequently moved to Shanghai to take part in the New Wave by Da Vittorio project as sous chef.
In summer 2023, Nicoló brought his passion and energy to 81⁄2 Otto e Mezzo BOMBANA in Shanghai. Thanks to his creativity and dedication, he was promoted to Executive Chef, continuing to delight diners with inventive dishes that celebrate the delicacy, romance, and vibrant spirit of Italian cuisine.
