Paul “Yoda” Iskov is an Australian chef best known as the founder and head chef of Fervor, a roving dining experience celebrating native Australian ingredients and the cultures and landscapes they come from. 

Born and raised in Western Australia with a love of surfing, Iskov began his culinary journey at 19 and later worked in acclaimed kitchens around the world, including Perth, Copenhagen, São Paulo, and Mexico City. These experiences deepened his appreciation for local and indigenous ingredients and inspired his return home. In 2013 he launched Fervor, inviting diners to enjoy multi‑course menus in extraordinary natural settings—from deserts to forests and coastlines—featuring native foods foraged with and learned about from Traditional Custodians. 

Iskov is passionate about sustainability, First Nations rights, and mentoring young chefs. He has appeared on television, authored a cookbook, and won industry awards such as the WA Good Food Guide Industry Leadership Award.
