His passion for cooking began in his childhood, helping his mother in the kitchen and enjoying her meals. This interest led him to attend a gastronomy vocational school and gain early experience in Krakow’s hotel restaurants.Eager to grow, Klima worked at renowned Polish establishments like Ancora, Senses, and Atelier Amaro before interning at top European restaurants, including Noma and Kadeau. In 2019, he became head chef and co-owner of Bottiglieria 1881.Klima’s cooking highlights local ingredients from Lesser Poland, showcasing wild berries, herbs, fruit, mushrooms, and venison in a menu that reflects the richness of Polish terroir. Known for its warmth and evoking a sense of home, his food balances fine dining with heartfelt care. In April 2024, Klima released his first book, Fun Dining, and opened a casual restaurant, Bufet.
