Roy Caceres, born in Bogotá in 1977, moved to Italy at sixteen, where a job as a dishwasher sparked the passion that would define his career. With family roots spanning Colombia, Syria and Spain, he developed a culinary identity grounded in cultural diversity and deep respect for ingredients. He trained in renowned Italian kitchens, including Il Pellicano and Locanda Solarola, steadily refining his technique and creative voice

In 2010 he opened Metamorfosi in Rome, a restaurant that quickly gained wide recognition for its inventive, multicultural approach to contemporary cuisine. After its closure, Caceres launched Carnal in 2020, a vibrant concept blending Latin-American flavours with Italian produce.

His return to fine dining came in 2023 with Orma, a restaurant that embodies his philosophy of “borderless cuisine.” Here, Italian terroir meets the flavours of his heritage in dishes focused on intensity, clarity and meaningful storytelling.

Throughout his career, Caceres has earned significant acclaim for his distinctive style, innovative thinking and contributions to Rome’s gastronomic landscape. Orma stands today as the clearest expression of his vision: cuisine that leaves a mark through flavour, identity and emotion.
