
Sebastian Jiménez is a Mexican chef who blends the traditional flavors of the Faroe Islands with international influences, especially from his native Mexico. Born in Atlixco, he began his culinary journey at the age of 17, working in kitchens around the world.
He founded his own pop-up restaurant, Cocina Ocho, inspired by his roots and food culture. At 21, he had the opportunity to open and develop a Latin American cuisine concept in Dubai, which deepened his understanding of diverse food traditions. His journey took him through Thailand, Indonesia, France, the Netherlands, Russia, and finally, the Faroe Islands.
Since 2019, Sebastian has been part of the team at KOKS, where he refined his skills in Faroese cuisine. Now, he brings his experience and creativity to Ræst, where his cooking reflects a fusion of cultures, techniques, and flavors.
At Ræst, Sebastian continues to explore and innovate, combining the deep-rooted traditions of fermentation and preservation with modern culinary influences, creating a truly unique dining experience.
