Tomos Parry is a Welsh chef known for his distinctive approach to open-fire cooking and dedication to seasonal British ingredients. Born in Anglesey, he developed an early passion for food while working in a local restaurant before studying Politics & History at the University of Cardiff. During his time at university, he trained under Grady Atkins at Le Gallois, laying the foundation for his culinary career.
After moving to London at 25, Tomos gained experience at renowned restaurants such as The River Café and Kitchen Table before becoming Head Chef at Climpson’s Arch in Hackney. His work there led him to open Kitty Fisher’s in Mayfair, where he played a key role in its success.
In 2018, Tomos opened Brat in Shoreditch, a restaurant inspired by the wood-fired cooking techniques of Spain’s Basque region. Brat quickly became one of London’s most celebrated dining spots, known for its high-quality ingredients and unique approach to grilling. In 2023, he expanded his vision with the opening of Mountain in Soho, further cementing his influence on the London culinary scene.
