Bio

Yusuke Takada, born in Amami Oshima in 1977, is a renowned chef known for his innovative culinary approach. He graduated from Tsuji Gakuen Culinary and Confectionery College in 1991 before moving to France in 2007 to refine his skills. After gaining invaluable experience abroad, Takada returned to Japan and opened La Cime in Osaka in 2010.

At La Cime, Takada focuses on balancing three key elements – guests, cuisine, and space – to create a harmonious dining experience. His philosophy is centered around the idea of „listening” to the ingredients, coaxing out their natural flavors to craft dishes that highlight their purity and essence.

One of the signature dishes at La Cime is Takada’s Boudin Dog, a batter-fried boudin noir colored with edible bamboo charcoal, eaten in a single bite. This playful yet refined creation reflects his ability to combine technique, creativity, and respect for the ingredients he works with.
