Alexandre Couillon, born in 1975 in Dakar and raised on the island of Noirmoutier, is one of France’s most acclaimed chefs. In 1999, together with his wife Céline, he took over his family’s modest restaurant, La Marine, and transformed it into an international culinary destination. Deeply connected to his island’s landscape, Couillon builds his cuisine on the rhythm of the tides, local fishing traditions, and seasonal produce from his own garden. 

His dishes are both precise and poetic, reflecting his philosophy of elevating simplicity through a profound respect for nature. Couillon’s talent and authenticity quickly brought him recognition. In 2016, he was featured in Netflix’s Chef’s Table: France, which introduced his work to a worldwide audience. The following year, he was named “Chef of the Year” by Gault & Millau, honoring his sensitivity to regional flavors and his distinctive creative voice. 

In 2020, he earned a place among the Top 100 of The Best Chef Awards, further cementing his reputation as a leading figure in modern gastronomy. Today, Couillon continues to shape the culinary landscape, drawing inspiration from the sea, the land, and the heritage of Noirmoutier.
