El Bar de Paco Morales Córdoba
Paco Morales is a Spanish chef. His ability to innovate and his personality have allowed him to bring to our times the most refined aromas and flavors of Al-Ándalus, recreating them in a contemporary and avant-garde tone that has always characterized his cuisine.
Born in Córdoba, Spain, Morales began his culinary career at a young age working in his family’s restaurant. Later he trained in the most prestigious restaurants in the world, including El Bulli, Mugaritz and El Celler de Can Roca.
A consolidated idea
In 2016, Morales opened his own restaurant Noor in Córdoba, where he combines gastronomy and culture. Paco focuses on showing the rich culinary history of Andalusia. It was a Muslim-ruled region that covered most of the Iberian Peninsula from the 8th to the late 15th century. He does this by using only ingredients that would be available in Spain during this period, presenting them in dishes that display a refined style and technique. Noor is much more than a restaurant; it has creative R&D space and huge research work.
Morales is known for his meticulous attention to detail and his ability to transform traditional dishes into works of art. It uses local and seasonal ingredients, often sourced directly from Andalusian farmers and producers, to create unique and flavorful dishes that pay homage to the region’s rich culinary heritage.
