Mauro Uliassi is an Italian chef. He was born in Senigallia, Italy and grew up in a family of restaurateurs. He is known for his ability to combine traditional Italian flavors and techniques with contemporary influences. Thanks to this, he creates dishes that are both familiar and innovative.
The culinary traditions
In 1990, Mauro Uliassi opened his own restaurant – Uliassi – in his hometown of Senigallia. The restaurant quickly gained a reputation and was awarded many awards. The culinary experience is enhanced by the warm welcome of the owners: sister Mauro Catia and his son Filippo work together with the chef.
The strength and originality of Uliassi’s cuisine lies in his ability to make good use of local ingredients, taking inspiration from the culinary traditions that have been so famous and successful on this coast over the last few decades and giving them a personal, creative twist. Fish and seafood are of course in the first place, although there is no shortage of meat on the menu. Especially the venison from Marche. This combination of sea and mountains in the menu reflects the soul of the region.

It is also worth mentioning that the restaurant is doing something for the local environment by banning the use of plastic and trying to convince fish suppliers not to use styrofoam to transport fish.
