In 2005 his brother, a successful chef working in Noma, called Vildgaard to help him organize some celebrations. It was a chance, followed by a proposal from Rene Redzepi that Vildgaard take over the management of the functional department in Noma. After the success, dark years followed, interspersed with returns to gastronomy. He bet everything on one card when he met his love – Tina in one of the restaurants. A year after the meeting, they decided to open a restaurant together and started preparations for their own place.
