As a teenager, he was a member of a gang. In times filled crime and drugs, cooking was his safe place. In 2005 his brother, a successful chef working in Noma, called Vildgaard to help him organize some celebrations. It was a chance, followed by a proposal from Rene Redzepi that Vildgaard take over the management of the functional department in Noma. After the success, dark years followed, interspersed with returns to gastronomy. He bet everything on one card when he met his love – Tina in one of the restaurants. A year after the meeting, they decided to open a restaurant together and started preparations for their own place.

Jordnær is a Danish word meaning down-to-earth

Eric Vildgaard and his wife opened a restaurant Jordnær. They create an exciting field-to-table dining experience with herbs from the area and freshly caught fish from nearby Lake Arresø, served in a charming dining room located in the historic Gentofte Hotel. The Chef’s style is characterized by precision and perfection. Describing food, he often refers to the emotions that accompany eating. Happiness is a feeling he bets on.

His restaurant at the Gentofte Hotel on the outskirts of Copenhagen quickly rose to the top of the gastronomic world. Eric and Tina were quickly noticed and appreciated by international awards.
